To install mortised hinges, do you install the cabinet or the door side of the hinge first? I have to think it matters....

I am not sure it matters, the key thing is to make sure that door is centered in the case. If it is an inset door then you want to make sure that there is an even about of gap all around. Set the door in place and level it for even gap with small wedges. Place the hinge against the edge that it will mount on and mark the location of the top and bottom on both the door and the case.

Remove the door and using the marks scribe and cut the motise on both the door and the case. Then it is easy to mount one or the other.

Usually you want to mount the hinges to the door, then the door to the cabinet. I usually measure 5/8" from the bottom of the door, to the opening of the cabinet (that is if you make your doors an inch and a quarter bigger than the opening). That is the standard that I use when I mount the inset hinges that I use. As long as you hang your doors the same amount on each cabinet and place the hinges the same distance from each end of each door, everything will work out good.
