My wife and I have been to home builders shows and have seen very thick butcher block tables (approx 10"). I'd love to build one but haven't found any plans, suggestions on wood etc. If anyone can lead me in the right direction, I'd appreciate it.

Consider this idea Jim.
Build your block using 8/4 stock. But use blocks approximately 4" long. Face glued to form your block of exposed end grain. The outter, may be as long as you like to give the appearence of being VERY thick. This procedure would save you considerable material and $$$$$$$$$$$$. :) Not to mention time savings.

Personally, I'd use a very tight grained wood such as hard maple..
