We are going to install 1x6 T&G yellow pine on our vaulted ceiling what should we use that will not cover the grain, and also not turn dark over time?

The only thing that I can think of that will not amber is water based polyurethane. It goes on milkey white but dries crystle clear, It come in gloss or satin and is little affected by uv rays. One thing to be aware of is that it drys vey fast and you should not over brush it. Do as many coats as possibe before installation because you have to sand it between coats with 220 just like oil.
