polyurethane gel question

I have been happy spraying lacquer on my projects for a long while, but here in the Northeast this time of year, it's cold and damp, not good conditions for spraying. I had a few small items to finish so I tried the polyurethane gel finish for the first time(I know where has this caveman been) applicatioon is great but I don't seem to be getting any build, is this correct for this product. I would like to hear the pro and cons for those who have used polyurethane gel finish.
